Asian Noodles With Chile Shrimp And Cashews Recipe
- 1/2 lb Dry Chinese-style noodles or possibly vermicilli
- 3 Tbsp. Peanut oil
- 1 lb Large shrimp, peeled and deveined
- 3 x Cloves garlic, chopped
- 1 Tbsp. Grated ginger root
- 4 x Scallions, thinly sliced
- 1 lrg Red bell pepper, julienned
- 1 lrg Yellow bell pepper, julienned
- 2 Tbsp. Prepared warm sauce
- 1 Tbsp. Chinese chile paste
- 1 Tbsp. Light soy sauce
- 1 Tbsp. Sesame oil
- 2 tsp Honey
- 1/2 c. Cashews, toasted
- In large pot of boiling salted water, cook noodles, breaking up with fork, till tender, about 3 min.
- Drain well and toss with 1 Tbsp.
- oil.
- In large skillet over medium-high heat, heat 1 Tbsp.
- oil and cook shrimp till they turn pink, about 3 min.
- Transfer to plate.
- In same skillet over medium-high heat, heat remaining Tbsp.
- oil and cook garlic and ginger till fragrant, about 1 minute.
- Stir in scallions and bell peppers.
- Cook till tender, about 3 min.
- In small bowl, combine warm sauce, chile paste, soy sauce, sesame oil and honey till blended.
- Stir into skillet with vegetables.
- Stir in shrimp and cashews and heat to boiling.
- Remove from heat.
- In large bowl, toss noodles with vegetables and shrimp.
- Serve immediately.
