Spam Broccoli Pecan Salad
- 1 can spam cut up
- 3/4 pound broccoli florets broken up
- 1/4 pound cheddar cheese
- 1/2 cup radishes sliced
- 1/4 cup white wine vinegar
- 3 tablespoons olive oil
- 2 tablespoons sugar
- 1 each garlic cloves minced
- 1 /2 teaspoons dry mustard
- 1/4 cup pecans toasted
- In skillet, saute SPAM over medium heat until lightly browned.
- In large bowl, combine broccoli, SPAM, cheese, and radishes.
- In small bowl, combine vinegar, oil, sugar, garlic, and dry mustard.
- Toss dressing with SPAM mixture.
- Cover and chill 1 hour.
- Before serving, stir in toasted pecans.
