Pasta with Creamy Green Tomato Sauce

  1. Prepare linguine or spaghetti according to package directions.
  2. Melt butter in a heavy saucepan.
  3. Add onion; saute until transparent.
  4. Add green tomato puree and whipping cream.
  5. Salt to taste.
  6. Simmer until sauce is thickened.
  7. While sauce is cooking, coarsely crush peppercorns in a mortar with a pestle.
  8. Drain linguine or spaghetti.
  9. Toss with sauce.
  10. Sprinkle each serving with crushed peppercorns, sundried tomatoes and parsley.
