Yorkshire Puddings

  1. Sift the flour and salt into a large bowl.
  2. Make a well in the center.
  3. Crack the egg into the well and add about one-third of the milk.
  4. Beat the egg and milk together with a wooden spoon, gradually drawing in the flour from the sides of the bowl.
  5. Stir in half of the remaining milk.
  6. Change to a whisk, and whisk in the remaining milk.
  7. Let stand for 30 minutes.
  8. Preheat the oven to 425F (220C).
  9. Generously grease the muffin cups with the drippings.
  10. Place the pan in the oven for about 3 minutes, or until the pan is very hot.
  11. Pour equal amounts of the batter into the muffin cups.
  12. Bake for 2025 minutes, until the puddings are golden brown and crisp.
  13. Serve immediately.
