Aunt Edythes Chicken Salad
- 3 cups Chicken, Cooked And Shredded
- 1 cup Celery, Diced
- 1 cup Carrots, Shredded
- 1/4 cups Grated Onion
- 1 teaspoon Salt
- 1 cup Salad Dressing Mix Like Miracle Whip
- 1 cup Whipping Cream
- 1 can (small 5 Oz. Can) Chow Mein Noodles
- Combine chicken, celery, carrots, onion, salt, and dressing and set aside.
- Whip the UNSWEETENED cream until stiff, then stir into chicken mixture (this is the secret ingredientyou wont believe what a yummy difference it makes).
- Refrigerate for several hours to allow flavors to meld.
- Just before serving stir in the noodles, and enjoy!
- Options: Add Craisins, sliced almonds, halved grapes, cashews or other items you love.
- I use finely sliced scallions in place of the grated onion because we like the milder flavors.
