Thai-Style Barbecue Brisket

  1. Combine barbecue sauce, brown sugar, soy sauce, jalapeno peppers, onions, ginger and garlic powder in saucepan.
  2. Bring to boil on medium-high heat, stirring frequently.
  3. Reduce heat to medium-low; simmer 10 min., stirring occasionally.
  4. Remove from heat; set aside.
  5. Place meat in full-size hotel pan (or half-size for trial recipe).
  6. Cover with foil.
  7. Bake in 275F-standard oven for 2-1/2 hours (or in 250F-convection oven for 1-1/2 hours) or until meat is tender and cooked through (160F).
  8. Drain excess liquid.
  9. Pour 2 cups of barbecue sauce (or 1 cup of the barbecue sauce for trial recipe) over meat.
  10. (Reserve remaining barbecue sauce mixture for serving with the meat.)
  11. Continue baking 30 min., basting occasionally with the barbecue sauce.
  12. Cut meat across the grain into thin slices.
  13. For each serving: Serve 3 oz.
  14. of meat along with 1/4 cup of the reserved barbecue sauce mixture in a souffle cup for dipping.
