Thai-Style Barbecue Brisket
- 4-1/2 cups OPEN PIT Original Restaurant Recipe Barbecue Sauce
- 1 cup brown sugar, firmly packed
- 1/2 cup soy sauce
- 1/2 cup jalapeno peppers, chopped
- 1/4 cup green onions, chopped
- 2 tsp. ground ginger
- 1 tsp. garlic powder
- 2 each beef briskets
- Combine barbecue sauce, brown sugar, soy sauce, jalapeno peppers, onions, ginger and garlic powder in saucepan.
- Bring to boil on medium-high heat, stirring frequently.
- Reduce heat to medium-low; simmer 10 min., stirring occasionally.
- Remove from heat; set aside.
- Place meat in full-size hotel pan (or half-size for trial recipe).
- Cover with foil.
- Bake in 275F-standard oven for 2-1/2 hours (or in 250F-convection oven for 1-1/2 hours) or until meat is tender and cooked through (160F).
- Drain excess liquid.
- Pour 2 cups of barbecue sauce (or 1 cup of the barbecue sauce for trial recipe) over meat.
- (Reserve remaining barbecue sauce mixture for serving with the meat.)
- Continue baking 30 min., basting occasionally with the barbecue sauce.
- Cut meat across the grain into thin slices.
- For each serving: Serve 3 oz.
- of meat along with 1/4 cup of the reserved barbecue sauce mixture in a souffle cup for dipping.
