No Peep Chicken
- 3 whole chicken breasts, deboned, skinned and split
- 1 1/2 c. uncooked rice
- 2 cans cream of mushroom soup
- chopped onions and mushrooms (optional)
- Any size square pan to bake in will do.
- Cover the bottom with a thick layer of white rice (depending on size of pan and how much you like rice; the amount may vary.)
- If not a nonstick pan, grease before putting rice in pan (fat free oil preferable).
- Spread 1 to 2 cans of cream of mushroom soup (if a small pan, only 1 can) over top of all the rice (do not add water to the soup).
- Cut up small pieces of butter and place them over the soup.
- Cut up a few onions and mushrooms (optional and to taste) and spread them also on the soup.
- Place a layer of whole deboned and skinned chicken breasts on top of everything.
- Place a few pieces of butter on the chicken. Wrap the pan with Reynolds Wrap and bake it in the oven at 350u0b0 for one and a half hours (without peeping at it).
