Kickin' Cauliflower Bites

  1. Preheat oven to 425F
  2. Clean cauliflower and break/cut into bite sized flourets
  3. Mix the melted butter, hot sauce, and salt and pepper well.
  4. Reserve a half cup of this.
  5. Pour potato flakes (I used Hungry Jack) into a separate bowl.
  6. Set up your dredging station
  7. Line your baking sheet with aluminum foil and spray with non-stick cooking spray.
  8. Coat the cauliflower with the hot sauce mixture.
  9. Now toss that in the potato flakes and transfer to the baking sheet.
  10. Repeat until all are coated.
  11. *Note: depending on the size of your cauliflower- you may need to make more sauce mixture.
  12. Brush with the remaining sauce reserved previously
  13. Bake in the oven for 30 minutes.
  14. Serve with Ranch or Blue Cheese!
