Crispy Tzatziki Chicken
- 4 cloves Garlic (very Finely Minced)
- 2 cups Plain Greek Yogurt
- 1 cup Grated Cucumber
- 1/2 whole Lemon, Juiced
- 6 whole Chicken Thighs, Bone-in, Skin-on
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Tzatziki Sauce (you Can Use Storebought Or Your Favorite Recipe)
- 2 cups Panko Breadcrumbs
- 1/4 cups Cold Butter, Sliced Into 6 Pieces
- Salt And Pepper, to taste
- Preheat your oven to 350 F and place the oven rack in the center position.
- Butter a 9x13 baking dish..
- In a bowl, mix together the chopped garlic, Greek yogurt, grated cucumber and lemon juice.
- Season with salt and pepper to taste.
- Set aside.
- Put the tzatziki sauce in a shallow bowl.
- Put the bread crumbs in another shallow bowl.
- Season the chicken with salt and pepper and then dip it in the tzatziki sauce.
- Then follow that with a coating of panko bread crumbs.
- Make sure to press the panko onto each piece of chicken to make sure it is thoroughly coated.
- Place the chicken into the prepared baking dish and repeat with the remaining chicken pieces.
- Top each piece of chicken with a piece of butter and cover the baking dish with foil.
- Bake for 45 minutes and then remove the foil and baste the chicken pieces with the juices in the pan.
- Bake uncovered for another 20 minutes to brown the chicken.
- Serve with extra tzatziki sauce.
