Crispy Tzatziki Chicken

  1. Preheat your oven to 350 F and place the oven rack in the center position.
  2. Butter a 9x13 baking dish..
  3. In a bowl, mix together the chopped garlic, Greek yogurt, grated cucumber and lemon juice.
  4. Season with salt and pepper to taste.
  5. Set aside.
  6. Put the tzatziki sauce in a shallow bowl.
  7. Put the bread crumbs in another shallow bowl.
  8. Season the chicken with salt and pepper and then dip it in the tzatziki sauce.
  9. Then follow that with a coating of panko bread crumbs.
  10. Make sure to press the panko onto each piece of chicken to make sure it is thoroughly coated.
  11. Place the chicken into the prepared baking dish and repeat with the remaining chicken pieces.
  12. Top each piece of chicken with a piece of butter and cover the baking dish with foil.
  13. Bake for 45 minutes and then remove the foil and baste the chicken pieces with the juices in the pan.
  14. Bake uncovered for another 20 minutes to brown the chicken.
  15. Serve with extra tzatziki sauce.
