Springtime Pasta
- 1 c. marscarpone cheese
- 3/4 c. Parmesan cheese
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tbsp. unsalted butter
- 1/2 tsp. kosher salt
- 1/2 tsp. Black pepper
- 1 lb. gemelli pasta
- 1 lb. thin asparagus
- 1 roasted chicken
- 6 small plum tomatoes
- 1 tbsp. fresh tarragon
- Bring a large pot of salted water to a boil.
- In a large heatproof serving bowl, combine marscarpone cheese, Parmesan, lemon zest, lemon juice, butter, salt, and pepper.
- Cook pasta in boiling water according to package directions, adding asparagus for the last 3 minutes.
- Place bowl with mascarpone cheese mixture over pasta pot; heat until cheeses almost melt; whisk until smooth.
- Drain pasta and asparagus; add to sauce in bowl with chicken, tomatoes, and tarragon; toss.
