Apple Spinach Salad With Warm Bacon Dressing Recipe
- 1 bn fresh spinach, stemmed, washed well and dry (about 4 packed c.)
- 1 x Fuji apple, cored and thinly sliced
- 1/4 c. finely diced raw bacon
- 1/4 c. finely diced red onion
- 1 tsp chopped garlic
- 2 tsp Dijon mustard
- 1/4 c. white distilled vinegar
- 2 Tbsp. sugar
- 1/8 tsp red chili flakes
- 1/2 tsp black pepper
- 1/4 tsp salt
- 2 Tbsp. extra virgin extra virgin olive oil
- To prepare salad, place spinach and sliced apples in large bowl and chill till ready to dress.
- To prepare dressing, cook bacon in small nonstick pan over medium-high heat till half-done, 2 to 3 min.
- Add in onion and garlic and cook till onion is barely tender, about 1 minute.
- In small bowl, whisk together mustard, vinegar, sugar, red chili flakes, pepper, salt and oil.
- Stir into pan with bacon mix.
- Immediately remove from heat and pour over spinach and apples.
- Toss till salad is well coated with dressing.
- Serve immediately.
- Makes 4 to 6 servings as starter salad.
