Roasted Sweet Potatoes with Beluga Lentils and Feta Cheese

  1. Preheat oven to 190 degrees C or 375 degrees F.
  2. Dice sweet potatoes without peeling them and put in a heat-proof skillet or casserole.
  3. Drizzle with olive oil, minced garlic, rosemary, a pinch of salt and black pepper.
  4. Roast for 20 minutes.
  5. Boil lentils in a pot with sufficient amount of water for 20 minutes.
  6. Drain and add lentils and feta to the sweet potatoes.
  7. Continue roasting 10 more minutes.
  8. Enjoy!
