Cajun Fettucine

  1. Cook fettuccine according to package directions.
  2. Meanwhile, melt butter in 12-inch skillet over medium heat.
  3. Add carrots; cook 3 minutes, stirring occasionally.
  4. Add zucchini and shrimp; cook 5 minutes or until shrimp are opaque and vegetables are crisp-tender, stirring occasionally.
  5. Add sausage; cook 2 minutes; stirring occasionally.
  6. Add half and half, 3/4 cup Parmesan cheese and Cajun seasoning; heat through, stirring constantly.
  7. Do not boil.
  8. Drain pasta; return to pot.
  9. Add shrimp mixture; toss well.
  10. Transfer to serving platter; sprinkle with remaining Parmesan cheese and additional Cajun seasoning, if desired.
