Cran-Raisin Chutney
- 1 (10 ounce) can cranberries
- 1 lemon, zest of
- 14 cup raisins
- 1 teaspoon grated gingerroot
- 1 teaspoon dry mustard
- 1 tart green apple, peeled, cored, diced
- 1 onion, chopped
- 12 red bell peppers or 12 green bell peppers or 12 yellow bell pepper, chopped
- 12 cup apple cider vinegar
- 14 cup brown sugar
- 12 teaspoon salt
- 1 garlic clove, minced
- Combine all ingredients in a saucepan; simmer, stirring frequently, until mixture thickens, about 1 hour.
- Cool and store in refrigerator until ready to serve.
