Honey-Lemon Chick Thighs and Rice
- 8 boneless skinless chicken thighs
- 2 tablespoons lemon juice
- 12 cup water
- 14 ounces chicken broth
- 1 teaspoon olive oil
- 2 tablespoons honey
- 1 large sweet onion, chopped
- 1 12 cups instant rice
- 1 teaspoon black pepper
- 1 12 tablespoons parsley
- 1 cup soy sauce, on the side
- In a large skillet with lid, heat olive oil and brown chicken.
- Remove the thighs after they are browned and add onion, saute until softened.
- Add parsley, pepper, broth, water, rice and honey, stir.
- Add chicken on top, cover.
- Simmer on medium heat for about 15-20 minutes or until chicken is done and sauce is absorbed.
- serve.
- add desired soy sauce to top as desired.
