Shrimp & Avocado Quesadillas

  1. Preheat a skillet (cast iron preferably) over medium high heat.
  2. Hit with a spray of olive oil Pam.
  3. Put the first tortilla in the pan, layer on the shrimp, cheese, and avocado, and top with the second tortilla.
  4. Spray the second tortilla with a bit of olive oil Pam as well.
  5. Cook for 5-7 minutes or until the tortilla begins to brown.
  6. Very carefully flip the quesadilla and cook for another 5-7 minutes.
  7. Remove from the heat, slice into wedges, and top with the yogurt and the salsa.
