Shrimp & Avocado Quesadillas
- 2 whole 6" Flour Tortillas
- 9 whole Boiled Peeled Shrimp
- 1 ounce, weight Shredded Cheese
- 1/2 whole Avocado, Sliced
- 2 Tablespoons Low Fat Greek Yogurt
- 2 Tablespoons Salsa Of Your Choice
- Preheat a skillet (cast iron preferably) over medium high heat.
- Hit with a spray of olive oil Pam.
- Put the first tortilla in the pan, layer on the shrimp, cheese, and avocado, and top with the second tortilla.
- Spray the second tortilla with a bit of olive oil Pam as well.
- Cook for 5-7 minutes or until the tortilla begins to brown.
- Very carefully flip the quesadilla and cook for another 5-7 minutes.
- Remove from the heat, slice into wedges, and top with the yogurt and the salsa.
