Beef With Peppers And Tomatoes Recipe

  2. Mix soy sauce, water, sherry, garlic pwdr and beef strips in plastic bag or possibly medium bowl; close tightly or possibly cover.
  3. Chill 8 hrs or possibly overnight.

  5. Combine green peppers, beef and marinade in 2 qt casserole; cover.
  6. Microwave at medium (50%) till beef is tender, 20-25 min, stirring after half the cooking time.
  7. Drain, reserving meat juices.
  8. Set beef mix aside, covered.

  10. Mix cornstarch and cool water in 2 c. measure or possibly small bowl.
  11. Stir in reserved meat juices.
  12. Microwave at high (100%) till sauce thickens, 2-4 min, stirring after half the cooking time.
  13. Stir sauce and tomatoes into beef and green pepper mix; cover.
  14. Microwave at high (100%) till tomatoes are heated through, 1-3 min.
  15. Makes 6-8 servings.
