Grilled Pimento Cheese, Bacon and Pepper Jelly Sandwich
- 2 slices Good White Or Whole Grain Bread
- 13 cups Homemade (or Good Quality Store-bought) Pimento Cheese, More Or Less Depending On Your Preference
- 2 slices Bacon (cooked Over Medium Heat Until Crispy)
- 1- 1/2 Tablespoon Red Or Green Pepper Jelly
- 1 Tablespoon Butter
- Lay out two pieces of bread on a work surface.
- On one piece of bread, spread a generous, but not ridiculous, amount of pimento cheese.
- Break the bacon into 4 pieces and place it on top of the pimento cheese.
- On the second piece of bread, spread a fairly thin coating of pepper jelly.
- Place the pepper jelly side of that piece of bread on top of the pimento cheese-bacon side of the other piece of bread.
- Heat a griddle or heavy skillet over medium heat.
- When surface of pan is hot, melt half of the butter in the center of the pan and place the sandwich right on top of the melted butter.
- Cook the sandwich until the first side of the bread is golden brown and crispy.
- Remove sandwich with a spatula and melt a little more butter in the pan.
- Carefully flip sandwich as you place it right on top of the melted butter.
- Continue to cook over medium heat until second side is golden brown and crispy.
- Remove sandwich from heat, slice it in half and place on a plate.
- Eat it while its hot!
- And by the way, one sandwich could very possibly serve two people.
- It is a rich sandwich experience!
