Smothered White Beans

  1. In a large heavy saucepan, heat the bacon fat.
  2. When the fat is hot, saute the onions and celery for about 5 minutes.
  3. Season with salt and pepper.
  4. Add the bay leaves.
  5. Add the sausage and garlic and continue to saute for 3 minutes.
  6. Add the beans and water.
  7. Bring the liquid up to a boil and reduce to a simmer.
  8. Cook for about 2 hours, or until the beans are soft and creamy.
  9. Season with salt, pepper, and hot pepper sauce.
  10. Remove the bay leaf.
