Walnut Cookies
- 34 cup whole wheat pastry flour
- 34 cup unbleached white flour
- 1 teaspoon baking powder
- 18 teaspoon salt (optional)
- 12 cup walnuts, chopped
- 4 ounces silken tofu
- 12 cup light olive oil
- 12 cup light brown sugar, packed
- 14 cup maple syrup
- 1 tablespoon vanilla (yes, one tablespoon)
- Combine flours, baking powder, and salt with whisk.
- In another bowl, combine tofu, olive oil, brown sugar, maple syrup, and vanilla with an electric mixer until smooth.
- Add dry ingredients and mix until combined.
- Stir in walnuts.
- Drop by teasponfuls onto ungreased baking sheets.
- Bake at 350 for approximately 12-15 minutes until edges start to brown.
