Cream Cheese- Cranberry Muffins
- 1 cup butter- softened
- 1 pkg. (8oz) cream cheese - softened
- 1 1/2 cup granulated sugar
- 4 eggs
- 1 1/2 tsp vanilla extract
- 2 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cup fresh or frozen cranberries
- 1/2 cup chopped pecans
- 2 cup confectioners sugar
- 3 tbsp milk-2%
- Preheat oven to 350 .
- In large bowl cream butter, cream cheese & sugar until light & fluffy.
- Add eggs.
- One at a time.
- Beating well after each.Beat in vanilla.
- Combine dry ing.
- Add to creamed mixture just until moistened.
- Fold in cranberries & nuts.
- Fill greased or lined muffin cups 3/4 full.
- Bake 20-25 min.
- ( mine only took about 18 ) .or until toothpick comes out clean
- Cool 5 min.move to wire rack.
- Combine confectioners sugar , milk.
- Drizzle over muffins.
