Plum Good Pie

  1. Cut each plum into 8 wedges; discard pits.
  2. Sprinkle flour evenly in bottom of partially baked pastry shell.
  3. Arrange plum wedges side by side in pastry shell, overlapping slightly.
  4. Combine cinnamon and sugar; sprinkle over plums.
  5. Pour eggs over top, covering surface evenly.
  6. Bake at 400F (200C) for 30 minutes or until top is lightly browned.
  7. PASTRY SHELL Combine flour and sugar; add butter and vinegar, mixing well.
  8. Roll pastry out to fit a 10-inch piepan; press evenly into bottom and halfway up sides of lightly greased 10-inch piepan.
  9. Prick bottom with a fork.
