Baked Curry Chicken

  1. Preheat oven to 450F.
  2. Mix 1/4 cup flour, the salt and pepper in medium bowl.
  3. Add chicken, one piece at a time; turn to evenly coat both sides.
  4. Place, skin-sides up, in single layer in shallow baking pan.
  5. Dot with 1 Tbsp.
  6. of the butter.
  7. Bake 15 to 20 min.
  8. or until chicken begins to brown.
  9. Meanwhile, melt the remaining 1 Tbsp.
  10. butter in medium saucepan on medium-high heat.
  11. Add apples, onions, 1/4 cup of the coconut, the garlic and curry powder.
  12. Cook and stir until onions are tender but not browned.
  13. Stir in 1 Tbsp.
  14. flour and the chicken broth; bring to boil.
  15. Remove from heat.
  16. Reduce oven temperature to 350F.
  17. Pour sauce over chicken; sprinkle with the remaining 1/2 cup coconut.
  18. Bake 20 to 25 min.
  19. or until chicken is cooked through (180F).
  20. Spoon rice onto serving platter; top with the chicken and sauce.
