Quick Cherry Dessert
- 1 c. (2 sticks) butter or margarine
- 1 tsp. almond extract
- 1 (21 oz.) can cherry pie filling
- 1 1/2 c. granulated sugar
- 4 eggs
- 2 c. all-purpose flour
- 2 tsp. baking powder
- powdered sugar (to dust over top; optional)
- In mixing bowl, cream together the butter and sugar.
- Add eggs. Beat until light and fluffy.
- Add extract.
- Stir in flour and baking powder.
- Mix until smooth.
- Butter a 13 x 9-inch cake pan. Turn the mixture into the pan.
- Spoon the pie filling into the cake in 16 spots, spacing 4 spoonfuls evenly in each direction.
- Bake at 350u0b0 for 45 to 50 minutes or until golden and cake tests done.
- Cut into 16 pieces.
- Place bottom side up on plate.
- Dust with powdered sugar and add whipped cream.
- Serve warm.
