Shrimp Caesar Salad in a Parmesan Bowl
- 2 qt. Kraft Shredded Parmesan
- 1/3 cup unsalted butter
- 1/3 cup garlic, minced
- 48 each uncooked jumbo shrimp, peeled, deveined (16/20 ct.), skewered Safeway 1 lb For $8.99 thru 02/09
- 2 tsp. salt
- 2 tsp. ground black pepper
- 2 gal. romaine lettuce, cut into 1-inch pieces
- 2 cups Kraft Creamy Caesar Dressing
- 2 cups croutons
- For each Parmesan bowl: Heat nonstick saute pan on medium heat.
- Add 1/2 cup (125 mL) cheese to skillet; spread to form 6-inch circle.
- Cook until cheese begins to melt and is lightly browned on bottom; turn.
- Cook until second side is lightly browned.
- Remove from skillet; immediately drape over inverted 6-inch bowl.
- Cool completely.
- For each serving: Add 1 tsp.
- (5 mL) butter to saute pan; cook until melted.
- Add 1 tsp.
- (5 mL) garlic and 1 shrimp skewer; season with 1/8 tsp.
- (0.5 mL) each salt and pepper.
- Cook 3 min.
- or until shrimp turn pink, turning once.
- Toss 2 cups (500 mL) lettuce with 2 Tbsp.
- (30 mL) dressing; add to Parmesan bowl.
- Top with 2 Tbsp.
- (30 mL) croutons and shrimp skewer.
