Caramelized Onion-Stuffed Sirloin

  1. Caramelized Onions: Cook bacon in large saute pan on medium heat until crisp.
  2. Remove bacon from pan, reserving drippings in pan.
  3. Add butter and onions to reserved drippings; cook on low heat 45 min.
  4. or until onions are caramelized, stirring occasionally.
  5. Add sugar; cook until melted, stirring frequently.
  6. Stir in the bacon, chipotle peppers and steak sauce; keep warm until ready to use.
  7. For each serving: Cut a 2-inch-long slit in side of 1 steak to make pocket for stuffing.
  8. Season steak with salt and black pepper.
  9. Grill to rare doneness.
  10. Remove from heat.
  11. Stuff steak with 1/3 cup of the onion mixture; place on small sheet pan.
  12. Finish cooking in a 350 degrees F standard oven until desired doneness.
