Taco Chicken

  1. Boil and de-bone entire chicken.
  2. Crush entire bag of chips and spread them out into a 9x13 baking pan.
  3. Saute onion and pepper in butter.
  4. Add soup, Rotel, chiles, and chicken.
  5. Simmer 10 minutes.
  6. Pour mixture over crushed chips.
  7. Cover mixture with cheese and bake at 350 until cheese is melted.
  8. We like to serve it with a bowl of fresh tomatoes or salsa to put on top.
