Horseradish and Green Onion Mashed Potatoes

• 3 pounds yellow potatoes
• 2 cups heavy cream
• 1/2 pound sweet unsalted butter
• 2 teaspoons salt
• 1 teaspoon ground black pepper
• 1/4 cup fresh grated horseradish root
• 1/2 cup chopped green onion

1. Peel potatoes.
2. Place potatoes in a large pot and cover with cold water.
3. Bring to a boil and simmer for 18 to 22 minutes, until potatoes are tender.
4. In a saucepan combine cream and butter.
5. Heat until very warm.
6. Add salt and pepper.
7. Drain potatoes and quickly pass through a food mill or potato ricer into a large bowl.
8. Whisk cream mixture into the hot potatoes.
9. Add the horseradish and green onions.
10. Serve hot.
