Chunky Cheese Muffins
- 80 grams Processed cheese
- 60 grams Mayonnaise
- 60 grams Sugar
- 1 Egg
- 150 grams Plain yoghurt
- 150 grams Cake flour
- 1 1/2 tsp Baking powder
- Dice the cheese to 1 cm pieces.
- Put the mayonnaise and sugar into a bowl and mix well with a whisk.
- Mix in the egg, then add the yoghurt and mix some more.
- Sift the flour and baking powder into Step 2.
- Mix in the cheese (keep some aside for decorating), and use a rubber spatula to mix in a cutting motion.
- Line the mould with muffin cups and pour in the batter.
- Top with the leftover cheese.
- Bake for 25-30 minutes in an oven preheated to 180 degrees C, and they're done.
- Adjust the baking time according to your oven.
