Brown Rice Veggie Stir Fry
- 2 tablespoons water
- 2 tablespoons gluten-free soy sauce
- 1 tablespoon olive oil
- 1 zucchini, chopped
- 12 cup mushroom, sliced
- 12 cup onion, chopped
- 2 cups brown rice, cooked
- 14 cup carrot, grated
- In a large skillet, combine the water, soy sauce, and oil.
- Add the zucchini, mushrooms and onion; stir fry for 4-5 min or until crisp tender.
- Add the rice and carrot, stir fry for 2-3 min or until heated through.
