Almond Lemon Muffins Recipe
- 1 3/4 c. flour
- 3 Tbsp. sugar
- 2 1/2 tsp baking pwdr
- 1/2 tsp salt
- 1 x egg
- 3/4 c. lowfat milk
- 1/3 c. butter melted
- 1/2 tsp lemon extract
- 1/8 tsp vanilla
- 3/4 c. minced unblanched almonds
- 2 tsp grated lemon rind
- Preheat oven to 400 degrees.
- Oil bottoms of 12 muffin c.. Sift together flour, sugar, baking pwdr, and salt in large bowl.
- Lightly beat egg in small bowl.
- Beat in lowfat milk, butter, lemon extract and vanilla.
- Stir in nuts and lemon rind.
- Pour all at once into flour mix.
- Stir briskly with fork just till all ingredients are moistened; don't overstir.
- Batter will look lumpy.
- Fill each prepared muffin c. 2/3 full with batter.
- Bake at 400 degrees for 25 min or possibly til golden.
- Remove from pan to wire rack.
