Apricot And Mint Stuffing Recipe
- 1/2 c. cracked wheat (burghul)
- 50 gm butter
- 3 x zucchini, medium
- 1 tsp garlic, crushed
- 1 Tbsp. mint jelly
- 2 Tbsp. minced fresh mint
- 1/2 c. dry apricots
- 1 1/2 c. fresh breadcrumbs
- 1 x Large eggs salt, pepper
- Cover cracked wheat with boiling water and leave to stand for 15 min.
- Drain and rinse well under cool water.
- Allow to drain well.
- Chop dry apricots.
- Heat butter in a pan and gently cook zucchini and garlic till zucchini is soft.
- Remove from heat, stir in mint jelly and mint, then wheat, apricots, breadcrumbs, egg and seasoning.
- Mix well till combined.
- Use as a stuffing for boned and rolled leg or possibly loin of lamb.
- Use to stuff roast lamb, pork or possibly chicken dishes.
