My Egg & Sweetcorn Sandwich '
- 8 Eggs hard boiled and peeled
- 2 tbsp mayonaise
- 2 tbsp Sour Cream
- 1/2 cup loose corn
- 1 pinch Salt
- 1/4 tsp Black cracked pepper
- 1 tsp lemon juice
- Break the hard boiled eggs in a large bowl, pressing down with a fork
- Add the mayonaise and sour cream and stir in gently
- Add the salt and pepper and mix in.
- Lastly add the corn anf the lemon juice mix in until its all creamy but not to break the corn.
- Add to a dish and make some tasty Sandwiches with it.
- Sprinkle wth parsley dried or fresh.
- You can make open sandwiches and sandwiched together , whats left you can cover leave in the fridg and have it next day on toast for breakfast.
