Peanut-Chile Sauce
- 1 each serrano chiles seeded
- 1/4 teaspoon piquin chile crushed
- 1 x black pepper
- 2 each scallions, spring or green onions ,
- 2 cloves garlic minced
- 1/4 teaspoon ginger minced
- 1/2 teaspoon peanut oil
- 1/2 cup stock
- 1/2 teaspoon soy sauce, tamari
- 1 teaspoon brown sugar, dark
- 1/2 each limes juiced
- 1/4 cup peanut butter
- Saute the green onion, garlic and ginger in the oil, 3 to 4 minutes, until soft but not browned.
- Add the stock and bring to a boil.
- Reduce heat and stir in the remaining ingredients.
- Simmer until thickened.
