Grilled Salmon & Pea Crostini

  1. Preheat oven to 400 degrees F.
  2. Spray a grill pan or griddle pan with your favorite cooking spray and heat on medium high.
  3. Coat salmon fillet with honey and grill 34 minutes each side.
  4. Remove and let rest.
  5. In a mixing bowl, add softened cream cheese, lemon juice and zest, black pepper, and dill weed.
  6. Stir well.
  7. Fold in cooked peas.
  8. Using an offset spatula, spread cream cheese and pea mixture on top of each slice of bread and place on a rimmed nonstick baking sheet pan.
  9. Using two forks, break apart grilled salmon and add to the top of each slice of bread.
  10. Place in the oven and bake 34 minutes.
  11. Remove to a serving platter and enjoy!
