Grilled Salmon & Pea Crostini
- 4 ounces, weight Fresh Salmon Fillet
- 1 Tablespoon Pure Honey
- 2 ounces, weight Softened Cream Cheese
- 1/2 whole Fresh Lemon, Zest And Juice
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Dill Weed
- 1/2 cups Cooked Baby Peas
- 12 slices (1/2 Inch Thick) Bread, From A Sub Roll
- Preheat oven to 400 degrees F.
- Spray a grill pan or griddle pan with your favorite cooking spray and heat on medium high.
- Coat salmon fillet with honey and grill 34 minutes each side.
- Remove and let rest.
- In a mixing bowl, add softened cream cheese, lemon juice and zest, black pepper, and dill weed.
- Stir well.
- Fold in cooked peas.
- Using an offset spatula, spread cream cheese and pea mixture on top of each slice of bread and place on a rimmed nonstick baking sheet pan.
- Using two forks, break apart grilled salmon and add to the top of each slice of bread.
- Place in the oven and bake 34 minutes.
- Remove to a serving platter and enjoy!
