Kale Soup
- 4 garlic cloves, minced
- 12 cup onion, chopped
- 3 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 10 cups fresh kale, chopped
- 14 ounces canned white beans, rinsed and drained
- 2 tablespoons red wine vinegar
- 12 teaspoon sea salt
- 14 cup nutritional yeast
- heat oil and saute onions and garlic.
- add brown sugar, oregano and thyme and cook until sugar melts.
- add kale and heat until cooked down but not over soft.
- add beans, vinegar and salt.
- sprinkle nutritional yeast on before serving.
