Dolmades Kima Me Avgolemono (Meatballs With Egg Lemon Sauce) Recipe
- 1 pound grnd beef
- 1/2 med. onion (minced)
- 1 teaspoon dry mint leaves
- 1 tbsp. uncooked rice
- Salt and pepper
- 1 1/2 c. beef stock
- 1 c. water
- 2 egg yolks
- Juice of 1 lemon
- Mix beef, onion, mint, parsley and rice.
- Season with salt and pepper and add in 1/4 c. beef stock.
- Mix well and form into walnut size balls.
- Bring the remaining stock to boil and drop meatballs into it.
- Simmer for 45 min.
- Beat egg yolks, add in lemon juice.
- Slowly add in some of the warm stock to yolks while beating.
- Stir egg yolk mix into remaining stock, cover, let stand 5 min off heat.
- Makes 4 servings.
