Emeril's Pork Dumplings With Spicy Sauce
- 12 lb ground pork
- 2 tablespoons green onions, chopped (green only)
- 1 tablespoon fresh ginger, minced
- 2 teaspoons garlic, minced
- 2 teaspoons soy sauce
- 2 teaspoons oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 24 small wonton wrappers
- napa cabbage, to line steamer
- soy sauce, for dipping
- chili oil, for dipping
- Combine pork through sesame oil.
- In a separate bowl, combine constarch and water.
- Place 1 tablespoon pork mixture in the center of the wonton.
- Using fingers, moisten the edges of the wrapper with cornstarch/water mixture.
- Bring edges up over filling and press to seal.
- Line steamer with cabbage leaves and place wontons 1/2 inch apart.
- Steam dumplings until cooked through, tender and translucent in color - approximately 10 minutes.
- Serve with soy sauce seasoned with chile oil to taste.
