Smoky Ham and Roasted Red Pepper Spread
- 8 ounces ham 1 1/2 cups, from leftover
- 1 cup sweet red bell peppers, roasted diced
- 1/2 teaspoon paprika smoked
- 1 tablespoon sherry vinegar
- 8 ounces cream cheese (reduced-fat) softened
- 5 tablespoons parsley leaves freshly chopped
- Add ham, peppers, paprika and vinegar in a food processor, pulse until the ham is finely chopped.
- Transfer the mixture to a medium bowl.
- Stir in cream cheese and parsley until smooth.
- Serve with bread or cracker.
