Maple Barbecue Salmon
- 1/2 cups Lemon Juice
- 1 teaspoon Paprika
- 1 teaspoon Dried Mustard
- 1/2 teaspoons Cayenne Pepper
- 13 cups Apple Juice
- 13 cups Pure Maple Syrup
- 2 Tablespoons Chopped Shallot
- 2 cloves Garlic, Minced
- 3 Tablespoons Soy Sauce
- 1/2 teaspoons Freshly Cracked Black Pepper
- 1 teaspoon Salt
- 4 pieces Salmon
- 1/4 cups Chopped Scallions For Garnish
- 1.
- Combine all ingredients except salmon and scallions in a Ziploc bag for marinating, reserving 1/2 cup of marinade for basting 2.
- Add salmon fillets to the marinade and let sit in the refrigerator for 3 hours.

- Drain and discard marinade.
- 4.
- Preheat oven to broil (500 degrees F), place fillets in a pan.
- 5.
- Broil salmon 4 inches from heat for 5 minutes, remove from oven and baste with remaining 1/2 cup of marinade.
- 6.
- Broil for another 5 minutes.
- 7.
- Garnish with fresh, chopped scallions.
