Tex-Mex Meatloaf
- 1 12 lbs ground meat
- 1 12 cups cheddar cheese, grated
- 1 cup tomato juice
- 12 cup onion, chopped
- 1 (4 ounce) can green chili peppers, chopped (mild or medium)
- 4 cups corn chips
- 1 egg
- 2 garlic cloves, chopped
- 2 tablespoons chili powder
- 1 teaspoon salt
- 12 teaspoon pepper
- sliced olive
- Preheat oven at 350 degrees.
- In large bowl combine meat and 1 cup cheese, tomato juice, chili powder, egg, garlic and seasonings.
- Stir in 2 cups crushed chips.
- Bake 40-45 minutes at 375.
- Remove and top with cheese and remaining chips.
- Add olives.
