Quick Simmered Kimchi Potatoes
- 2 to 3 Potatoes
- 130 grams Kimchi (Chinese cabbage kimchi)
- 1 tsp Mayonnaise
- 200 ml Water
- 1 tsp Chicken soup stock granules
- 1 dash Toasted sesame seeds
- Cut the potato into small bite-sized pieces After soaking in a bowl of water, wrap in cling film and microwave for 3 minutes until soft.
- Put the ingredients into a saucepan and bring to a boil.
- Then add the potatoes from Step 1 and the kimchi.
- Simmer over medium heat until almost all of the liquid has evaporated.
- Take it off the heat and add the mayonnaise to give it richness, and mix.
- Transfer to a serving dish and sprinkle with sesame seeds if you like.
