Terri's Minestrone

  1. In a large kettle, heat oil and add onion and garlic.
  2. Saute 3 minutes, or until translucent.
  3. Add carrots and celery and saute 5 minutes more.
  4. Add mushrooms, beef broth, roast beef, cannelini beans and tomatoes.
  5. Cook on high heat until it reaches a boil, then reduce heat to a simmer and cook 15 minutes.
  6. Add water, macaroni noodles, and green beans and cook until noodles are al dente.
  7. Mangia!
