Bleu Cheese Olive Ball Recipe
- 8 ounce. pkg. cream cheese, softened
- 3 tbsp. butter, softened
- 1 tbsp. brandy
- 4 ounce. pkg. bleu cheese, crumbled
- 1 tbsp. chives
- 1/2 c. finely minced ripe olives
- 1 c. minced pecans
- Combine first 3 ingredients; beat at medium speed of electric mixer till smooth.
- Add in bleu cheese and beat well.
- Stir in chives and olives.
- Mix will be soft.
- Shape mix into a ball and roll into pecans.
- Chill several hrs or possibly overnight.
- Garnish with olives and parsley.
