Spicy Barbecue Sauce
- 1/2 tsp. salt
- 1/4 tsp. dried thyme
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. dried oregano
- 1/4 tsp. white pepper
- 1/4 tsp. celery seed
- 18 tsp. cayenne
- 1 Tbs. vegetable oil
- 1/2 cup chopped onion
- 2 tsp. minced garlic
- 1/2 tsp. chopped chipotle chile
- 1/2 cup tomato paste
- 1/4 cup fresh lime juice
- 1/4 cup orange juice
- 1/4 cup tamari or soy sauce
- 2 Tbs. prepared mustard, preferably stone ground
- 1 Tbs. prepared horseradish
- 1/4 tsp. hot pepper sauce
- 3 Tbs. maple syrup
- 1 tsp. apple cider vinegar
- 2 or 3 drops liquid smoke, to taste
- In small bowl, mix seasoning ingredients.
- Set aside.
- In medium skillet, heat oil over medium heat.
- Add onion and garlic and cook, stirring often, 1 minute.
- Stir in seasoning mix, chipotle chile, tomato paste and 1 cup water and cook, stirring occasionally, 5 minutes.
- Transfer tomato mixture to blender or food processor and process until onion begins to break down, 30 to 60 seconds.
- Add lime juice, orange juice, tamari, mustard, horseradish, hot pepper sauce, syrup, vinegar and liquid smoke.
- Process until smooth.
- Transfer barbecue sauce to airtight container and store in refrigerator for up to 1 week.
