Mom's Ratatouille

  1. Add oil, garlic, and onion to large pot.
  2. Cook until onion becomes almost translucent.
  3. Add sliced eggplant, mushrooms, and squash and cook for another 3 minutes.
  4. Add diced tomatoes, and allow to cook until everything is tender, about 20 minutes.
  5. Add sugar, salt, and pepper to taste.
  6. Prepare rice to serve under the Ratatouille, and enjoy!
