Saucy Peach Crepes

  1. Beat eggs and milk in medium bowl with wire whisk until well blended.
  2. Add flour, butter and salt; beat until smooth.
  3. Let stand 10 min.
  4. Heat lightly greased 8-inch skillet on medium-high heat.
  5. Ladle 1/4 cup of the batter into skillet.
  6. Cook 1 to 2 min.
  7. on each side or until lightly browned on both sides.
  8. Remove from skillet; cover to keep warm.
  9. Repeat with remaining batter to make a total of 8 crepes.
  10. Bring 1 cup of the water to boil in large saucepan on medium-high heat; stir in dry gelatin mix at least 2 min.
  11. until completely dissolved.
  12. Mix remaining 1/4 cup water and the cornstarch; stir into gelatin.
  13. Bring to boil, stirring constantly.
  14. Add frozen peaches; stir.
  15. Cook 3 to 5 min.
  16. or until heated through, stirring occasionally.
  17. Fold each crepe in half, then fold in half again to form triangle.
  18. To serve, top each crepe with 1/3 cup of the warm gelatin mixture and 1 Tbsp.
  19. of the whipped topping.
