Saucy Peach Crepes
- 2 eggs
- 1 cup milk
- 1 cup flour
- 2 Tbsp. butter, melted
- 1/2 tsp. salt
- 1-1/4 cups water, divided
- 1 pkg. (4-serving size) JELL-O Orange Flavor Gelatin
- 1 Tbsp. cornstarch
- 1 bag (16 oz.) frozen sliced peaches
- 1/2 cup thawed COOL WHIP Whipped Topping
- Beat eggs and milk in medium bowl with wire whisk until well blended.
- Add flour, butter and salt; beat until smooth.
- Let stand 10 min.
- Heat lightly greased 8-inch skillet on medium-high heat.
- Ladle 1/4 cup of the batter into skillet.
- Cook 1 to 2 min.
- on each side or until lightly browned on both sides.
- Remove from skillet; cover to keep warm.
- Repeat with remaining batter to make a total of 8 crepes.
- Bring 1 cup of the water to boil in large saucepan on medium-high heat; stir in dry gelatin mix at least 2 min.
- until completely dissolved.
- Mix remaining 1/4 cup water and the cornstarch; stir into gelatin.
- Bring to boil, stirring constantly.
- Add frozen peaches; stir.
- Cook 3 to 5 min.
- or until heated through, stirring occasionally.
- Fold each crepe in half, then fold in half again to form triangle.
- To serve, top each crepe with 1/3 cup of the warm gelatin mixture and 1 Tbsp.
- of the whipped topping.
