kitty's Pumpkin Cheesecake
- 3 eggs
- 8 ounces cream cheese
- 8 teaspoons Sweet 'n Low (8 packets or 1 1/2 Tbls. liquid saccharin)
- 13 teaspoon vanilla butternut flavoring
- 13 teaspoon maple extract
- 13 teaspoon vanilla extract
- 12 cup pumpkin (1/2 can)
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 12 teaspoon nutmeg
- 14 teaspoon salt
- Blend all ingredients in blender or processor until liquified.
- Pour into 9" pie pan.
- Bake at 350 for 30 minutes or until a knife comes out clean.
- Let cool.
- Topping with pecans before baking or topping with sugar free whipped cream is Maaahvelous!
