Tex-Mex Mac-n-Cheddar with Beef and Peppers

  1. Preheat a medium nonstick skillet over medium-high heat.
  2. Add a drizzle of EVOO and the beef.
  3. Brown the meat, breaking it up with a wooden spoon.
  4. Add the peppers and cook together for 5 minutes, seasoning with salt and pepper to taste.
  5. Prepare the Mac-n-Cheddar, without the broccoli, as in the master recipe, #4.
  6. Fold in the beef and bell peppers after combining the cheese sauce with the cooked pasta.
