Tex-Mex Mac-n-Cheddar with Beef and Peppers
- Broccoli
- Sharp white Cheddar for the yellow Cheddar
- More EVOO
- 1 pound ground sirloin
- 1 red or yellow bell pepper, cored, seeded, and cut into thin strips
- Preheat a medium nonstick skillet over medium-high heat.
- Add a drizzle of EVOO and the beef.
- Brown the meat, breaking it up with a wooden spoon.
- Add the peppers and cook together for 5 minutes, seasoning with salt and pepper to taste.
- Prepare the Mac-n-Cheddar, without the broccoli, as in the master recipe, #4.
- Fold in the beef and bell peppers after combining the cheese sauce with the cooked pasta.
