Bermuda Triangle Mango Chili Jam Recipe
- 3 lb Green mango peeled, pitted, and cut into pcs
- 2 c. Sugar
- 2 x Scotch bonnet chili peppers - (to 3) finely diced
- 1 x Sweet red pepper seeded, diced 1/4"
- 1/4 c. Fresh lime juice
- Put the mango, sugar, chili peppers and sweet pepper into a non-reactive pot.
- Place over medium heat and stir.
- Cook for 10 to 12 min.
- Crush the mango against the sides of the pot and continue to cook till all the sugar has dissolved into a syrup.
- Cook for an additional 12 to 15 min.
- Add in the lemon juice and cook for 2 to 3 min.
- Taste carefully and add in additional lemon juice if you like.
- Cold and transfer to covered storage containers.
- Keep refrigerated.
